Throwdown!

"Throwdown with Bobby Flay" is one of my fave shows. That show gets me into the kitchen whipin' up food faster than you can say, "Yum!"

I've watched that blueberry pancake Throwdown a few times over. I just had to make those Bobby Flay pancakes. I'm not a fan of fluffy pancakes. I love crepes. I make crepes every chance I get -- savory or sweet, it doesn't matter. I'm thinking of purchacing a real crepe pan to make them like they do in Brittany, France. Those Bobby Flay fluffy pancakes were calling to me! So, I made them.

They came out fluffy and beautifully golden with dots of fresh blueberries everywhere. I never knew about this technique where you fold stiff egg whites into the pancake batter. If you like fluffy pancakes, this is the way to go. I'm still not a fan of thick, fluffy pancakes, but these were darn good.

Flay's pancake recipe turned out great. Soft on the inside and crispy good outside, too. They were perfect pancakes that you'd be pround to serve. I buy Grade B maple syrup, cause I just like intense maple syrup. I cook with it a lot, too. It's really tasty on roasted butternut squash.

I've been trying different types of bacon, too. Its amazing how many different types there are. I've settled on a thick cut, apple smoked bacon. Lot of meat running though out, not too much fat. Had a German pepper coated bacon that was almost 99% fat...good for the veins...
