Shared on Mon, 07/03/2006 - 13:24For grilled fajitas, I like to put some chicken onions and peppers on skewers and grill them. I take tortillas and spread refried beans and cheese in and fold them in half. Then lightly coat them in olive oil and throw them on the grill real quick (just enough to get the cheese to melt but not long enough to burn). Flip them so you get the grill marks on the other side too. Take everything off the grill and open the tortillas up and put your skewer stuff in there. Add some hot sauce and youre all set.
