These are the recipies you fine tune and make when you have company. You know the type. Well, last night I can say with no problem I had one of those meals. Only bummer was it was dinner for one, as my wife and kids are up at my inlaws for their spring break. So...what was on the menu?
Seared, then roasted beef tenderloin (was on sale for like $6.99/lb instead of the normal $14.99/lb)
Baked potatoe, with butter, sour cream, and chives
Grilled asparagus
Ceaser salad
The filet came out perfect, medium rare with a warm pink center - I had pulled it out of the 450 degree oven after the sear at 125 degree internal temp, and it continued to cook while resting that little bit more. The potatoe I seasoned with sea salt and then baked, not too hard but also not mushy. Asparagus went on the grill just to crisp it up a bit. And salad...well that was out of a bag.
A lot of effort just for myself for the night, but daaaaamn, was it worth it. If my wife didn't take the camera, I'd have taken pictures of the plate. Anyways...enough boasting. Any meals that you take particular pride in? If so, do tell!
