Shared on Thu, 04/03/2008 - 21:31For supper tonight, we had spinach/ ricotta ravioli with brown butter sauce. I'd never made (or even heard of) brown butter sauce.
Take 2 sticks of butter, melt them over medium heat, continue to heat and watch them carefully and stir constantly as the milk solids carmelize to a light chocolate brown. Be careful, it can go from brown to burnt quickly. The butter will have a nutty smell and flavor.
Drizzle over pasta and top with a little grated cheese (I used parmesean)
I don't know what to say, it was OH MY GOD! good. (I'd just skip the cheese next time though, it was unnessecary) Whatever ravioli you use, I think that things with light flavors are better than things like sausage filing.
The longest part was waiting for the water to boil for the pasta.
beats the hell out of hot dogs.
