You only really need to do it in the organized races when its required in the rules. Usually there is a number board that will be provided as part of the series. Other than that, you dont need to have your number displayed
I noticed for the DTM forum that there were three cars listed. Were these the ones to choose from? i.e. did each player choose one, tune it within the guidelines and then race with it?

That is correct.
As long as each car meets the set rules for each event its ok to run.

Numbers 1-100 are all listed. if the number does not have a name next to it, then its available.

Yes. In these situations, once you race one of the cars available in that series, you must race it for the remaining races of the series.
